Mix all marinade ingredients together. Slice pork into long strips about 4cm thick.
Coat pork thoroughly in marinade. Refrigerate overnight or at least 4 hours.
Preheat oven to 200°C (392°F). Line a baking tray with foil and place a wire rack on top.
Place pork on rack, reserving marinade. Roast 20 minutes.
Mix remaining marinade with 1 tbsp honey for glaze. Brush pork generously. Flip, brush again. Roast another 15 minutes.
Brush once more with glaze. Switch to grill/broil for 3–5 minutes until edges char slightly.
Rest 5 minutes before slicing diagonally. Serve with steamed rice or use in bao buns.
