Name: Char Siu (Cantonese BBQ Pork)
Ingredients: 800 g pork shoulder or neck; 3 tbsp hoisin sauce; 3 tbsp honey; 2 tbsp soy sauce; 1 tbsp oyster sauce; 2 tbsp Shaoxing rice wine; 0.5 tsp five-spice powder; 3 cloves garlic; 0.25 tsp white pepper; 0.5 tsp red food coloring

1

Mix all marinade ingredients together. Slice pork into long strips about 4cm thick.

2

Coat pork thoroughly in marinade. Refrigerate overnight or at least 4 hours.

3

Preheat oven to 200°C (392°F). Line a baking tray with foil and place a wire rack on top.

4

Place pork on rack, reserving marinade. Roast 20 minutes.

5

Mix remaining marinade with 1 tbsp honey for glaze. Brush pork generously. Flip, brush again. Roast another 15 minutes.

6

Brush once more with glaze. Switch to grill/broil for 3–5 minutes until edges char slightly.

7

Rest 5 minutes before slicing diagonally. Serve with steamed rice or use in bao buns.
