Ingredients: 8 oz rice noodles; 14 oz firm tofu; 1 cup bell peppers; 1 cup green beans; 3 cloves garlic cloves; 1 bunch Thai basil leaves; 3 tbsp soy sauce; 2 tbsp oyster sauce or vegetarian substitute; 2 tbsp vegetable oil; 1 optional red chili peppers; 1 tsp sugar; 1 tbsp lime juice; 2 stalks scallions

Cook rice noodles according to package instructions. Drain and set aside.

Cut tofu into small cubes and pan-fry until golden. Remove and set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add minced garlic, sliced red chili (if using), and sliced bell peppers. Stir-fry for 2-3 minutes.

Add green beans and cook for another 2 minutes.

Return tofu to the pan. Add soy sauce, oyster sauce, sugar, and lime juice. Mix well.

Add cooked noodles and toss to coat evenly.

Tear Thai basil leaves and add to the stir-fry. Cook for 1 minute.
